Homaro Cantu, Moto Restaurant, Chicago
Cnet has a good interview with Homaro Cantu, owner and chef of Chicago’s Moto Restaurant. Cantu focuses on molecular gastronomy stuff, and has become one of the leading chefs in this arena.
Cantu also beat Iron Chef Morimoto on Iron Chef America by a slim margin. Apparently he used lasers and liquid nitrogen in that battle.
I’m kind of divided about this - i mean, on one hand, it is very interesting and cool, and some stuff does look artistic. Plus, I love food, and I love computers - what is there not to like about this stuff?
But on the other hand, do i really need to eat my menu? do i need to see pictures of what my food is trying to emulate on the food itself (for example, on iron chef cantu made sushi rolls wrapped with paper that had sushi rolls printed on it)?, does my soup really have to change temperatures while I eat it? These features don’t make the food more tasty, just more visually appealing and neat.

I don’t want to player hate, but I think its kinda funny to think about eating your menu after ordering or drinking soup that is changing temperatures (what happens if you eat the menu before ordering then you don’t know what to order.) I don’t know if it makes the food any better but it does offer a different dining experience. If we chose resturants solely on taste, they would all just serve nice thick slabs of bacon, washed down with milkshakes, followed by krispy kreme donuts.
I understand the concept but my husband and I had a ten course meal and we left the restaurant still very very hungry. the portions of the food are way too little that a big man will not get full. Besides I called and asked the restaurant what kind of food it was and theywere vague and to be honest we were shocked. For example where it said on the menu Greek salad we got a shot of some cucumber juice and lemon how can that be filling, we just can’t comprehend how someone can get full. thanks
